An enticing and unique way of serving the ever so favorite Manchurian balls
MANCHURIAN PATTICE PAV
Ingredients
4 pavs
Machurian patty
1 cup grated cabbage
1 cup grated cauliflower
1 medium carrot finely chopped
Salt to taste
Crushed black peppercorns to taste
2 tsps dark soy sauce
1 tsp green chilli sauce
½ cup refined flour (maida)
¼ cup corn flour
4 tbsps oil
Gravy
1 tbsp finely chopped garlic
½ tbsp finely chopped ginger
2 tbsps finely chopped celery
2-3 green chillies diagonally slices
2 spring onion bulbs chopped
½ tsp dark soy sauce
1 tsp green chilli sauce
2 tbsps corn flour slurry
Salt to taste
Crushed black peppercorns
¼ tsp dried red chilli flakes
2 tbsps chopped spring onion greens
A dash of vinegar
To sprinkle
Slices onions as required
Tomato slices as required
4 tsps chopped fresh coriander leaves
Method
1. Take cabbage in a large bowl add cauliflower carrot salt crushed black peppercorns dark soy sauce green chilli sauce refined flour and corn flour and mix well.
2. Divide the mixture into equal portions and shape each portion in a patty.
3. Heat oil in a non-stick shallow pan place the patties and shallow fry till golden brown and crisp on both sides. Drain on absorbent paper.
4. To make the gravy heat the oil remaining in the same pan. Add garlic ginger celery green chillies spring onion bulbs and sauté for 2-3 minutes. Add ½ cup water dark soy sauce green chilli sauce and mix well. Cook till mixture boils. Add corn flour slurry and mix and cook till the mixture thickens.
5. Add salt crushed black peppercorns dried red chili flakes spring onion greens and mix well.
6. Place the patties into it and coat with the sauce. Switch off the heat and add a dash of vinegar mix well.
7. To assemble slice pavs in half without cutting through. Place one pattice in each pav pour the sauce over it.
8. Sprinkle sliced onions tomato slices and coriander leaves and serve.
