CURRIED FISH AND CHIPS
Ingredients
1 teaspoon Madras curry powder
2 basa fish fillets, cut into 2 pieces
3-4 medium potatoes, cut into fingers
1 tablespoon lemon juice
Salt to taste
Crushed black peppercorns to taste
1 teaspoon red chilli flakes
1 teaspoon dried mixed herbs
Oil for drizzling + for deep-frying
½ cup refined flour
1 egg
1 cup dried breadcrumbs
Tartar sauce for serving
Method
1. Preheat oven to 180° C.
2. Take fish fillets on a plate. Add lemon juice, salt and Madras curry powder and mix.
3. To prepare chips, transfer potato fingers on a baking tray. Sprinkle salt, crushed peppercorns, chilli flakes and dried mixed herbs on top. Drizzle some oil on top and mix well.
4. Put the tray into the preheated oven and bake for 15-20 minutes.
5. Heat sufficient oil in a pan.
6. Spread flour in a shallow plate. Beat egg in another shallow plate. Spread breadcrumbs on a plate.
7. Dust each marinated fish fillet with flour, dip in beaten egg and coat with breadcrumbs.
8. Deep-fry prepared fish fillets in the hot oil till golden and crisp. Drain on absorbent paper.
9. Serve with baked chips and tartar sauce.
