Dr. Narasimha Kumar's recipe - Four Flour Dosa
FOUR FLOUR DOSA
Ingredients
⅓ cup finger millet (ragi) flour
½ cup pearl millet (bajra) flour
½ cup sorghum (jowar) flour
½ cup whole wheat flour
½ cup split black gram (urad dal), soaked
1 teaspoon fenugreek seeds, soaked
Salt to taste
Oil as required
Method
1. Blend together the black gram and fenugreek seeds with water as required into a smooth paste. Transfer into a bowl.
2. Add finger millet flour, pearl millet flour, sorghum flour, wheat flour and salt and mix well. Add some water and mix well into a smooth batter.
3. Heat some oil on a non-stick tawa and spread it with a tissue paper. Pour a ladleful of batter on it and spread into a dosa. Drizzle some oil on the sides and cook till golden and crisp from the underside.
4. Fold and serve hot.
