CHOCOLATE AND COCONUT SOFT CAKE
Ingredients
� cup chopped dark chocolate, melted
� cup desiccated coconut
1/3 cup refined flour + for dusting
8 tablespoons + 1 teaspoon butter + for greasing
� cup icing sugar
3� eggs
1/3 cup castor sugar
1 teaspoon vanilla essence
Method
1. Preheat oven to 180� C. Grease a round cake tin with some butter and dust with some flour.
2. Cream together icing sugar and butter in a bowl till light.
3. Sift flour into the mixture and fold well.
4. Beat together the eggs and castor sugar in another bowl till fluffy. Add this to the butter-sugar mixture and mix well.
5. Add desiccated coconut and chocolate and mix. Add vanilla essence and mix till well combined into a batter.
6. Pour the batter in the prepared tin, put the tin in the preheated oven and bake for 20-25 minutes. Remove from oven, cool and demould.
7. Cut into wedges and serve.
