Bowl your near and dear ones with a batch of Matcha and White Chocolate Cookies that are a unique twist to the cookies. Make sure you have black coffee to serve with. MATCHA AND WHITE CHOCOLATE COOKIES Ingredients 1½ tbsps green matcha powder ⅓ cup chopped white chocolate ⅓ cup butter 1 cup refined flour (maida) ¼ tsp salt ¼ tsp baking soda 3 tbsps brown sugar 2 tbsps castor sugar ½ tsp vanilla essence 1 egg 1 egg yolk Method 1. Preheat the oven at 180°C. 2. To make the brown butter heat butter in a non-stick pan. Cook till it melts and turns golden. Take the pan off the heat and allow the melted butter to cool to room temperature. 3. Sift refined flour in a large bowl. Add matcha powder salt baking soda and mix well. 4. Take the brown butter in a large bowl. Add brown sugar castor sugar and vanilla essence. Break in the egg and add the egg yolk and whisk till the sugar melts. 5. Add the flour mixture little by little and gently fold in till well combined. Add the white chocolate and mix with light hands till a dough is formed. 6. Take small portions of the dough and shape each portion into a ball. Press it lightly and make a small cavity in the centre. Arrange on a lined baking tray and bake in the preheated oven for 12-15 minutes. 7. Bring the tray out of the oven and allow the cookies to cool slightly. 8. Arrange the cookies on a serving plate and serve.
