KHASTA ALOO CHAAT
Ingredients
4 medium potatoes (aloo), boiled, peeled and mashed
Oil for deep-frying
Salt to taste
2 tablespoons cornstarch
Yogurt as required
Green chutney as required
Date-tamarind chutney as required
Red chilli-garlic chutney as required
Chaat masala for sprinkling
Sev as required
Red chilli powder for sprinkling
Chopped fresh coriander leaves for garnishing
Method
1. Heat sufficient oil in a kadai.
2. Combine potatoes, salt and cornstarch in a bowl and mix.
3. Divide the mixture into equal portions and shape them into tikkis.
4. Deep-fry tikkis in hot oil till golden and crisp. Drain on absorbent paper.
5. Place tikkis in individual serving platters and break them using a fork. Squeeze out some yogurt, green chutney and date-tamarind chutney on top.
6. Put some red chilli-garlic chutney and sprinkle some chaat masala on top. Put some sev and sprinkle some chilli powder on top.
7. Serve immediately garnished with chopped coriander.
