Another fab way to have scrambled eggs. Minced chicken sauteed in spices and few veggies goes well with scrambled eggs that are cooked differently to make them soft and luscious. SCRAMBLED EGGS WITH MINCE Ingredients 8 eggs 1 cup chicken mince (keema) Salt to taste 2 tbsps oil 2 tsps finely chopped ginger-garlic 3-4 green chillies 2 small onions finely chopped 4 tbsps finely chopped carrot 1 tsp red chilli powder ¼ tsp turmeric powder 2 tbsps chopped fresh coriander leaves + for garnish Method 1. Break in the eggs in a bowl. Add salt and whisk well with a fork. 2. Heat oil in a non-stick pan. Add ginger-garlic and green chillies and mix well. Cook for 1 minute. 3. Add onion and mix well. Cook till translucent. 4. Add carrot red chilli powder and turmeric powder and mix well. Cook for 1-2 minutes. 5. Add chicken mince salt and coriander leaves and sauté on high heat for 3-4 minutes. 6. Reduce the heat to medium add green peas and mix well. Cook for 2-3 minutes. 7. Take the pan off the heat. 8. To make the scrambled eggs bring sufficient water to a boil in a non-stick shallow pan. Add salt and mix well. 9. Gently slide in the eggs mixture and lightly mix. Cook for 2-3 minutes or till the eggs are done. Collect the cooked eggs with the help of a perforated spoon and add a portion into individual serving bowls. Add a portion of the chicken mixture and garnish with coriander leaves. Serve hot.
