Rice vermicelli tossed in Oriental sauces mushrooms broccoli and with succulent chicken makes for a delicious main that you can rustle up while watching your favourite TV series. STIR FRIED CHICKEN NOODLES Ingredients 400 grams cooked rice vermicelli 2 tbsps sesame oil 1½ tbsps finely chopped garlic 2 spring onion bulbs sliced 150 grams boneless chicken breast cut into thin strips 2 dried shitake mushrooms soaked drained and sliced 1 cup shredded Chinese cabbage Salt to taste Crushed black peppercorns to taste 10-12 blanched small broccoli florets 2-3 fresh red chillies slit 1 tsp dark soy sauce 2 tsps light soy sauce ½ tsp fish sauce (optional) 1 tsp white vinegar ½ cup diagonally sliced spring onion greens Method 1. Heat sesame oil in a non-stick wok. Add garlic and sauté for 1 minute. 2. Add spring onion bulbs and sauté for 1 minute. Add the chicken strips and sauté on high heat for 2-3 minutes. 3. Add shitake mushrooms and mix well. Add the shredded cabbage salt crushed black peppercorns and mix well. Sauté for 2-3 minutes. 4. Add broccoli and red chillies and mix. 5. Add the vermicelli dark soy sauce light soy sauce fish sauce and vinegar and toss till well combined. Cook for 1-2 minutes. 6. Add the spring onion greens and mix. 7. Serve hot.
