NEW YORK CHEESECAKE
Ingredients
8-10 digestive biscuits, coarsely crushed
1 tablespoon castor sugar
85 grams butter, melted
Filling
300 grams cream cheese
250 grams castor sugar
3 tablespoons refined flour
A pinch salt
1� teaspoons lemon juice
1� teaspoons vanilla essence
Zest of 1 lemon
3 eggs
1 egg yolk
1� cups sour cream
Method
1. Preheat oven to 180� C.
2. Take crushed biscuits in a bowl. Add castor sugar and butter, mix well.
3. Line a loose bottom tin with the prepared mixture, put the tin in the preheated oven and bake for 10 minutes to make the crust.
4. To make the filling, beat the cream cheese till creamy. Add castor sugar, flour and salt and beat again.
5. Add lemon juice, vanilla essence and lemon zest and beat.
6. Add eggs and egg yolk and beat again. Add sour cream and mix till well combined.
7. Pour the prepared filling over the baked crust and tap lightly. Put the tin in the preheated oven and bake for 20-25 minutes.
