HOT CROSS BUNS - (Serves - 4)
Ingredients
3¼ cups + 10 tablespoons refined flour
13 grams fresh yeast
A pinch castor sugar
3½ tablespoons sugar
A pinch salt
¼ teaspoon nutmeg powder
1 teaspoon cinnamon powder
30 grams butter, melted + for basting
1½ cups milk
¼ cup raisins
Method
1. Take yeast in a bowl. Add castor sugar and 2 tablespoons warm water, mix well and set aside to activate.
2. Take 3¼ cups flour in a bowl. Add sugar, salt, nutmeg powder and cinnamon powder and mix. Make a well in the center, add activated yeast and mix well.
3. Add melted butter and mix. Add milk and knead into a soft dough. Dust a bowl with some flour, transfer the dough, cover with damp muslin cloth and set aside to prove for 30 minutes.
4. Dust the worktop with some flour, transfer the dough and knock back to release excess air. Put raisins and knead again.
5. Divide the dough into small equal portions and shape them into balls. Place them on a baking tray, cover with damp muslin cloth and set aside to prove for 20-30 minutes.
6. Preheat oven to 180º C.
7. Take 10 tablespoons flour in another bowl. Add 5 tablespoons water and mix well to get a thick slurry.
8. Fill a piping bag with slurry and pipe out on the proven buns to make a cross.
9. Put the baking tray in preheated oven and bake for 15-20 minutes, basting with some melted butter. Remove from oven and cool.
10. Serve.
