Paneer Bhuna Masala | ढाबा स्टाइल पनीर भुना मसाला | Paneer Recipes | Sanjeev Kapoor Khazana
A spicy sharp tasting gravy with paneer preparation. The marinated paneer when cooked in mustard oil adds a unique taste to the dish. Make sure you have butter naans or rotis to get started.
PANEER BHUNA MASALA
Ingredients
400 grams cottage cheese (paneer) cut into 1 inch cubes
½ cup grated cottage cheese (paneer)
½ cup yogurt
Salt to taste
2 tbsps roasted gram flour (besan)
1 tsp cumin powder
¾ tsp coriander powder
½ tsp black pepper powder
½ tsp garam masala powder
1 tsp red chilli powder
¼ tsp turmeric powder
1 tbsp ginger-garlic paste
2-3 tbsps mustard oil
Gravy
2-3 tbsps mustard oil
1 tsp cumin seeds
2 star anise
1 inch cinnamon stick
3-4 green cardamoms
4-5 cloves
6-8 black peppercorns
2 large onions finely chopped
1 tbsp ginger-garlic paste
2 large tomatoes finely chopped
Salt to taste
1 tsp red chilli powder
½ tsp garam masala powder
¼ tsp turmeric powder
1½ tsps coriander powder
2-3 green chillies slit
1 tbsp chopped fresh coriander leaves
Method
1. Combine together yogurt salt roasted gram flour cumin powder coriander powder black pepper powder garam masala powder red chilli powder turmeric powder and ginger-garlic paste in a large bowl. Add paneer cubes and gently mix till each cube is well coated with the masala. Set aside to marinate for 15-20 minutes.
2. Heat mustard oil in a pan.
3. Add the paneer cubes and cook on both sides for 2-3 minutes. Take the pan off the heat.
4. To make the gravy heat mustard oil in a wide pan. Add cumin seeds star anise cinnamon stick green cardamoms cloves black peppercorns and sauté till fragrant.
5. Add onions mix and cook till golden brown. Add ginger-garlic paste and mix well. Cook for 1-2 minutes.
6. Add tomatoes mix add salt and mix again. Cook till soft and pulpy.
7. Add red chilli powder garam masala powder turmeric powder and coriander powder and sauté for 1-2 minutes.
8. Add 1 cup water mix and cook for 2-3 minutes. Add grated paneer and mix well. Cook for 1-2 minutes.
9. Add the paneer cubes and gently mix till well combined. Add green chillies and coriander leaves and mix well. Cook for 1-2 minutes.
10. Serve hot.
