PHYLLO APPLE PIE
Ingredients
12 phyllo sheets
2 medium apples
½ lemon
¼ cup roasted and crushed walnuts
¼ cup raisins
6 tbsps castor sugar
¼ tsp cinnamon powder
Butter for greasing + as required
2 eggs
2 tbsps corn flour
¾ cup milk
Toffee sauce to drizzle
Vanilla ice cream to serve
Method
1. Core the apples peel and chop them. Transfer in a bowl. Squeeze lemon add walnuts raisins 3 tbsps castor sugar cinnamon powder and mix well.
2. Line a baking tray with parchment paper grease with butter.
3. Preheat the oven at 180ºC.
4. Place 2 phyllo sheets on worktop and apply butter evenly. Top up with 2 more phyllo sheets and apply some more butter on top.
5. Spread a portion of apple stuffing gather the edges so as to create pleats.
6. Place the tray in preheated oven and bake for 15 minutes.
7. For the custard break eggs in a bowl. Add remaining castor sugar corn flour and mix well. Add milk and mix.
8. Strain the custard directly on the baked pies and bake for another 20 minutes.
9. Cut into pieces drizzle toffee sauce and serve with vanilla ice cream.
