Ghujiya a century old dish that dates back to the 13th century stuffed with dates and walnuts is a crispy delight that should definitely be a part of your Diwali menu!
DATE AND NUT WONTON GUJIYA
Ingredients:
¼ cup pistachios chopped
¼ cup almonds chopped
¼ cup walnuts chopped
¼ cup desiccatedcoconut
½ tbsp ppoppy seeds
5-6 dates seeded and chopped
½ tsp green cardamom powder
7-8 wonton sheets
Refined flour slurry as required
Oil for deep frying
Rabri to serve
Pistachios blanched and slivered for garnish
Silver warq for garnish
Method:
1. Take pistachios in a bowl. Add almonds walnutsdesiccatedcoconut poppy seeds dates and green cardamom powder. Mash the mixture with the back of a spoon and mix well.
2. Take wanton sheets on a worktop.Place spoons of mixture in centre. Apply refined flour slurry on edges. Fold the sheets into halves and seal the edges press the edges with a fork to create a pattern.
3. Heat sufficient oil in a kadai deep fry the wontons until golden and crisp. Drain on an absorbent paper.
4. Serve hot with rabri garnished with pistachio slivers and silver warq.
