ALMOND CRUSTED FISH WITH LEMON BUTTER SAUCE - (Serves - 4)
Ingredients
¼ cup almond flakes
2 rawas fish fillets
Juice of 1 lemon
1 tablespoon butter
Salt to taste
Crushed black peppercorns to taste
1 teaspoon red chilli flakes
1 tablespoon ginger-garlic paste
1 teaspoon pommery mustard
Chopped spring onion greens for garnishing
Method
1. Take fish on a plate. Add salt, crushed peppercorns, chilli flakes, ginger-garlic paste, juice of ½ lemon and pommery mustard and rub well. Set aside to marinate for 1 hour.
2. Preheat oven to 180º C. Line a baking tray with silicon mat.
3. Transfer the marinated fish on the lined baking tray, put almond flakes on top and lightly press.
4. Place the baking tray in preheated oven and bake for 15-20 minutes.
5. To prepare lemon butter sauce, heat butter in a non-stick pan. Add 3-4 tablespoons water and whisk. Add juice of remaining lemon, whisk and cook for 2-3 minutes.
6. Place the baked fish on individual serving platter and drizzle some lemon butter sauce on top.
7. Serve hot garnished with spring onion greens.
