A simple Manchurian fried rice bowl to statiate your Chinese cravings and to make your meal an extra special one.
MANCHURIAN FRIED RICE BOWL
Ingredients :
Manchurian
1 cup grated cauliflower
1 small carrot finely chopped
1 cup grated cabbage
Salt to taste
1-2 green chillies chopped
1½ tsps finely chopped ginger
¼ tsp white peppercorn powder
¼ tsp soy sauce
2 tbsps refined flour
2 tbsps corn flour
Oil for deep frying
Gravy
1 tbsp oil
1 spring onion bulb chopped
1-2 green chillies chopped
2 tsps finely chopped garlic
1 tsp finely chopped ginger
1 tsp finely chopped celery stalk
2 tsps soy sauce
1½ tsps red chilli sauce
2 cups vegetable stock
Salt to taste
Crushed black peppercorns to taste
3 tbsps corn flour slurry
1-2 spring onion greens finely chopped
Rice
2 cups cooked basmati rice
1½ tbsps. oil
2-3 spring onion bulbs chopped
2 tsps finely chopped garlic
1 tsp finely chopped ginger
1 medium carrot cut into small cubes
6-7 French beans chopped
Salt to taste
Crushed black peppercorns to taste
¼ tsp dark soy sauce
¼ tsp vinegar
1-2 spring onion greens finely chopped
Spring onion green curls for garnish
Method :
1. Take cauliflower in a large bowl add carrot grated cabbage salt and mix well. Set aside for 10 minutes.
2. Take a muslin cloth in another bowl add the vegetable mixture into it and squeeze out the excess water.
3. Transfer the squeezed vegetable into another large bowl add green chillies ginger and adjust salt. Add white peppercorn powder soy sauce refined flour corn starch and mix till well combined.
4. For making Manchurian divide the prepared mixture into equal portions and shape each portion into a ball.
5. Heat sufficient oil in a wok deep fry the prepared Manchurian balls till golden brown and crisp. Drain on an absorbent paper.
6. For the gravy heat oil in a non-stick wok add spring onion bulb green chillies and chopped garlic and ginger celery and sauté well.
7. Add soy sauce red chilli sauce and vegetable stock mix well.
8. Add salt crushed black peppercorns and mix well. Allow the mixture to come to a boil.
9. Add corn flour slurry and mix well. Cook till the gravy thickens.
10. Add the prepared Manchurian balls and mix cook for 5-7 minutes.
11. Add chopped spring onion greens into the Manchurian gravy and mix well. Take the pan off the heat.
12. Meanwhile heat oil in another non-stick wok to make fried rice. Add spring onion bulbs garlic ginger and sauté well.
13. Add carrot French beans and sauté on high heat for 2-3 minutes.
14. Add rice and toss till well combined add salt crushed back peppercorns soy sauce and toss well.
15. Add vinegar spring onion greens and take the pan off the heat.
16. For serving transfer the rice into a serving bowl and pour the prepared Manchurian gravy on top. Garnish with spring onion greens curls.
