SPINACH AND PINE NUT ROLL
Ingredients
1 large bunch spinach, blanched and chopped
¼ cup pine nuts
200 grams samosa dough
1 tablespoon olive oil
1 tablespoon chopped garlic
1 large onion, finely chopped
Salt to taste
Crushed black peppercorns to taste
16 cheese slices
Oil for deep-frying
Tomato ketchup for drizzling
Method
1. Heat olive oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add onion and sauté till translucent.
2. Add spinach, mix and cook for 1 minute. Add pine nuts, salt and crushed peppercorns, mix and cook for 1-2 minutes.
3. Heat sufficient oil in a kadai.
4. Divide the dough into equal portions and roll out into oval sheets. Trim the edges of each sheet to shape into a square.
5. Place two cheese slices in the center of each square sheet, put some spinach mixture on one side, apply some water on the edges, roll and fold the ends in and press to seal.
6. Deep-fry the rolls in hot oil till golden brown and crisp. Drain on absorbent paper.
7. Drizzle some tomato ketchup on top and serve hot.
