TIRAMISU WAFFLE
Ingredients
2 tablespoons + ½ teaspoon coffee decoction
1½ cups refined flour
¼ cup + 2 tablespoons powdered sugar
1 teaspoon baking powder
A pinch salt
2 tablespoons cocoa powder
2 eggs
1 teaspoon vanilla essence
¼ cup milk
1 tablespoon melted butter + for greasing
½ cup mascarpone cream cheese
1 cup whipped cream
Dark chocolate slab as required
Chocolate sauce for drizzling
3-4 strawberries, hulled
Fresh mint leaves for garnishing
Method
1. Preheat a waffle iron.
2. Sieve together flour, ¼ cup powdered sugar, baking powder, salt and cocoa powder in a bowl and mix. Make a cavity in the centre, add eggs, vanilla essence and 2 tablespoons coffee decoction and whisk well.
3. Add milk and whisk. Add butter and whisk to make a smooth batter.
4. Grease the preheated waffle iron with some butter, pour a ladleful of batter and cook for 2-3 minutes or till golden from both sides. Transfer onto a plate.
5. To prepare cream cheese mixture, combine cream cheese, 4 tablespoons powdered sugar and ½ teaspoon coffee decoction in another bowl and whisk well. Add whipped cream and fold well.
6. Fill a piping bag fitted with a nozzle with cream cheese mixture.
7. Halve the waffles. Using a peeler prepare chocolate shavings.
8. Pipe out cream cheese mixture in alternate cavities of waffle halves.
9. Drizzle some chocolate sauce on one side of a serving platter. Pipe out some cream cheese mixture and place the waffles on the sides. Garnish with strawberries, chocolate shavings and mint leaves.
10. Serve immediately.
