TORTILLA CHIPS TOPPED WITH GRILLED CORN AND CHEDDAR
Ingredients
250 grams tortilla chips
1 cup corn kernels
1 cup grated cheddar cheese
1 tablespoon olive oil
1 small onion, finely chopped
1-2 pickled jalapenos, sliced
ΒΌ cup chopped fresh coriander leaves
Crushed black peppercorns to taste
Salt to taste
1 tablespoon lemon juice
Method
1. Heat olive oil in a non-stick pan. Add corn kernels, mix and roast on high heat for 3-4 minutes or till golden. Transfer into a bowl and add onion.
2. Roughly chop jalapenos and add alongwith chopped coriander, crushed peppercorns, salt and lemon juice and mix well. Add cheese and mix well.
3. Place the tortilla chips onto a serving platter and top each with the prepared corn-cheese mixture.
4. Serve immediately garnished with some bell pepper curls.
