Paneer Kolhapuri | घर पर इस तरह बनाएं होटल जैसी पनीर कोल्हापुरी | Sanjeev Kapoor Khazana
The paneer in a fiery gravy made from chillies spices and a coconut base tastes just as delicious.
PANEER KOLHAPURI
Ingredients
400 grams cottage cheese cut into 1 inch cubes
Masala paste
2 tbsps oil
1 inch cinnamon stick
8-10 black peppercorns
1 black cardamom
4 green cardamoms
1 star anise broken
3-4 cloves
2 tbsps coriander seeds
3-4 Kashmiri dried red chillies
4-5 bedgi dried red chillies
1 tsp cumin seeds
¾ cup grated dried coconut
1 tsp poppy seeds (khaskhas)
Gravy
1 tbsp oil
2 bay leaves
2 medium onions finely chopped
Salt to taste
1½ tbsps ginger-garlic paste
1 cup tomato puree
2 green chillies chopped
1 tbsp red chilli paste
½ tsp turmeric powder
1½ tsps coriander powder
1 tsp sankeshwari red chilli powder
½ tsp garam masala powder
1 medium green capsicum cut into 1 inch cubes
1 tbsp lemon juice
2 tbsps chopped fresh coriander leaves + for garnish
Method
1. Heat oil in a pan. Add cinnamon stick black peppercorns black cardamom green cardamoms star anise cloves coriander seeds Kashmiri dried red chillies bedgi dried red chillies cumin seeds and coconut and roast till golden. Add poppy seeds and continue to roast for 1 minute. Take the pan off the heat and allow to cool.
2. Transfer the roasted mixture in a grinder jar add 1 cup water and grind to a fine paste.
3. Heat oil in the same pan add bay leaves and cook for a few seconds.
4. Add onions salt mix and cook till golden brown.
5. Add ginger-garlic paste and sauté for 1 minute. Add tomato puree and mix well. Cook till the oil separates.
6. Add green chillies and red chilli paste and mix well. Cook on medium heat for 2-3 minutes stirring occasionally.
7. Add the ground paste and mix well. Cook till oil separates.
8. Add turmeric powder coriander powder sankeshwari red chilli powder and garam masala powder and sauté for 1-2 minutes.
9. Add 1½ cups water mix and cook for 2-3 minutes. Add capsicum and mix well. Cook for 1-2 minutes.
10. Add lemon juice mix and cook for a few seconds. Add coriander leaves and sauté for 1 minute. Add cottage cheese and mix cook for 1 minute.
11. Serve hot garnished with coriander leaves.
