SPICY STIR FRIED SQUIDS
Ingredients
1-2 fresh red chillies
2-3 squids, cut into rings
1 tablespoon oil+ for deep-frying
1-2 stalks spring onion greens, finely chopped
2 tablespoons chopped garlic
Crushed black peppercorns to taste
2-3 green chillies, chopped
1½ tablespoon soy sauce
Salt to taste
½ egg
2-3 tablespoons cornstarch
2inch celery stick, finely chopped
1 tablespoon chopped coriander stems
1 inch ginger, finely chopped
10-15 mint leaves, chopped
Method
1. Heat sufficient oil in a pan.
2. Take squids in a bowl. Add 1 tablespoon chopped spring onion greens, 1 tablespoon chopped garlic, crushed peppercorns, some of the choppedgreen chillies, ½ tablespoon soy sauce and salt and mix well. Set aside to marinate for 30 minutes.
3. Break egg in a bowl, whisk well, add to squids and mix well. Add cornstarch and mix again.
4. Deep-fry marinated squids in hot oil till golden and crisp. Drain on absorbent paper.
5. Diagonally slice fresh red chillies.
6. Heat 1 tablespoon oil in a non-stick pan. Add sliced red chillies, remaining green chillies, celery and chopped coriander stems, mix and sauté on high heat for a minute.
7. Add ginger and sauté for a minute. Add remaining garlic and sauté for 30 seconds. Add remaining soy sauce and some water and mix well.
8. Add fried squids and toss to mix. Add chopped mint, remaining spring onion greens and crushed peppercorns and toss to mix.
9. Serve hot.

Cooking Time: 10-12 minutes
