VIETNAMESE SANDWICH
Ingredients
1 baguette
1 tablespoon groundnut oil
1 tablespoon chopped garlic
4 shallots, finely chopped
1 inch lemon grass, finely chopped
400 grams boneless chicken legs, cut into cubes
1 tablespoon light soy sauce
1 tablespoon fish sauce
Salt to taste
Crushed black peppercorns to taste
1 teaspoon sugar
Mayonnaise for spreading
1 fresh jalapeno, cut into juliennes
½ cup carrot and radish juliennes, soaked in vinegar, salt and sugar for 4-5 hours
Method
1. Heat oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add shallots and sauté till translucent.
2. Add lemon grass, mix and sauté for 30 seconds. Add chicken, toss to mix and cook for a minute.
3. Add soy sauce, fish sauce, salt, crushed peppercorns and sugar, toss to mix and cook till chicken is fully done.
4. Slit the baguette with one side intact. Spread some mayonnaise inside. Put in some cooked chicken, some jalapenos and some pickled carrots and radish.
5. Serve immediately.
Preparation Time: 4-5 hours
Cooking Time: 10-12 minutes
