Crab shells stuffed with spicy crab meat mixture and served.
STUFFED CRAB
Ingredients
¾ cup crab meat
Crab shells for serving
Crab claws for serving
2 tablespoons oil
1-2 garlic cloves, finely chopped
2 celery sticks, finely chopped
1½ tablespoons red chilli paste
2 teaspoons honey
½ tablespoon chicken stock cube, crushed
2 tablespoons spring onion greens
1 teaspoon vinegar
Salt to taste
1 tablespoon cornflour slurry
Crushed black peppercorns to taste
Roasted sesame seeds for garnishing
Chopped fresh coriander leaves for garnishing
Method
1. Heat oil in a non-stick pan. Add garlic and sauté till fragrant.
2. Add celery and mix well. Add red chilli paste and honey, mix and cook till the oil separates.
3. Add chicken stock, 1 tablespoon spring onion greens, mix and cook for a minute.
4. Add crab meat, mix and cook for 2 minutes. Add ¼ cup water, stir and mix for a minute. Add ½ teaspoon vinegar, salt, cornflour slurry and mix well.
5. Add 1 tablespoon spring onion greens and mix well. Add crushed peppercorns and remaining vinegar mix. Remove from heat and set aside.
6. Place crab shell and claws on a serving plate. Place the cooked crab meat mixture in the shell, garnish with sesame seeds and coriander leaves.
7. Serve immediately
