Crisp fried snack made from bajra is a wonderful monsoon recipe that you can enjoy with your cup of tea or as an evening snack. This classic Gujarati snacks tastes best with chutney.
BAJRA WADA
Ingredients
1½ cups pearl millet flour (bajra flour)
½ cup yogurt
½ tsp turmeric powder
1 tsp red chilli powder
¾ tsp coriander powder
1 tsp white sesame seeds
1 tbsp freshly chopped coriander
Salt to taste
2 green chillies chopped
Oil for deep frying
Tomato ketchup to serve
Method
1. Take bajra flour in a bowl. Add yogurt turmeric powder red chilli powder coriander powder white sesame seeds chopped coriander salt and green chillies. Add sufficient water and knead into a dough.
2. Divide dough into equal portions and shape each portion into medium sized tikkis and slightly flatten them.
3. Heat sufficient oil in a kadai add the discs and deep fry on medium heat till nice and crisp. Drain on an absorbent paper.
4. Serve hot with tomato ketchup.
