CHICKEN PITA POCKETS
Ingredients
250 grams boneless chicken, cut into strips
4 pita breads
1 tablespoon oil
1 medium onion, sliced
Salt to taste
Crushed black peppercorns to taste
2 tablespoons mayonnaise
1 teaspoon mustard paste
Iceberg lettuce leaves as required
1 medium tomato, sliced
2-3 pickled gherkins, sliced
Amaranth micro greens as required
Method
1. Heat oil in a non-stick pan. Add onion and sauté till translucent. Add chicken, mix and cook till done.
2. Add salt and crushed peppercorns and toss to mix. Transfer in a bowl.
3. Toast pita breads on a non-stick tawa till golden from both sides. Transfer on the worktop, halve and slit to make pockets.
4. Add mayonnaise and mustard paste to chicken mixture and mix well.
5. Put some torn lettuce leaves, some chicken mixture, tomato slices and some chopped gherkins in each halved bread and top with some amaranth micro greens.
6. Serve immediately.
