KARWARI PRAWN CURRY
Ingredients
½ cup medium prawns, shelled and deveined
Salt to taste
½ teaspoon turmeric powder
2 tablespoons coconut oil
1 teaspoon coriander seeds
4-5 black peppercorns
3-4 dried red chillies
1 teaspoon rice
½ teaspoon tamarind pulp
½ medium onion, finely chopped
½ cup fresh scraped coconut
2-3 drumsticks, scraped and cut into 2 inch pieces
Method
1. Take prawns in a bowl. Add salt and turmeric powder, mix and set aside to marinate.
2. Heat 1 tablespoon coconut oil in a non-stick pan. Add coriander seeds and peppercorns and sauté till fragrant.
3. Add broken dried red chillies, mix and roast for 30 seconds. Remove from heat and cool.
4. Grind together the roasted spice mixture alongwithrice, tamarind pulp, 1 tablespoonchopped onion, coconut and some water to a fine paste.
5. Heat remaining coconut oil in a non-stick pan. Add remaining onion and sauté till golden. Add marinated prawns and drumsticks and mix well. Add ½ cup water, mix, cover and cook for 5 minutes. Add the prepared paste, mix and cook on low heat for 2 minutes.
6. Serve hot.

Cooking Time: 12-15 minutes
