JAGGERY CAKE
Ingredients
¾ cup jaggery powder
½ cup yogurt
¼ cup oil
1 cup whole wheat flour (gehun ka atta)
½ tsp baking soda
1 tsp baking powder
A pinch of cinnamon powder
¼ cup milk
Coffee of your choice to serve
Method
1. Preheat the oven at 180ºC.
2. Take yogurt in a bowl. Add oil and jaggery powder in 3-4 batches and beat with an electric beater till the jaggery melts and the mixture turns light.
3. Sift whole wheat flour baking soda baking powder and cinnamon powder directly into the bowl and gently fold the mixture.
4. Add milk and mix till well combined.
5. Transfer the batter into a 7 x 2 x 3 silicon loaf mould and tap it a few times. Place it on a baking tray. Bake in a preheated oven for 20-25 minutes.
6. Bring the tray out of the oven and allow the cake to cool slightly. De-mould and allow to cool completely.
7. Slice and serve with coffee of your choice.
