BAKED KABAB ROLLS
Ingredients
¾ cup whole wheat flour (atta)
¾ cup + 2 tablespoons refined flour (maida)
Salt to taste
½ teaspoon carom seeds (ajwain)
1tablespoon + 2 teaspoons oil
1 tablespoon green chutney + for spreading
Ghee for brushing
Stuffing
1 tablespoon oil
1-2 green chillies, chopped
6-7 French beans, finely chopped
2 raw bananas, boiled, peeled and grated
2 tablespoons gram flour (besan)
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
½ teaspoon garam masala powder
½ teaspoon cumin powder
Salt to taste
½ cup grated cottage cheese (paneer)
1 tablespoon chopped fresh coriander leaves
Method
1. Mix together wheat flour, ¾ cup refined flour, salt, carom seeds, 1 tablespoon oil and 1 tablespoon green chutney in a bowl. Add sufficient water and knead into a semi-soft dough. Set aside for 10-15 minutes.
2. To prepare stuffing, heat oil in a non-stick pan. Add green chillies and French beans and sauté for 1 minute.
3. Add raw bananas and sauté for 30 seconds. Add gram flour on one side of the pan and sauté for 1 minute and mix.
4. Add turmeric powder, chilli powder, garam masala powder, cumin powder and salt and mix. Add cottage cheese, mix and cook for 1 minute. Add coriander leaves and mix well. Transfer in a bowl and cool.
5. Preheat oven to 180° C.
6. Add remaining oil to the dough and knead again.
7. Divide the dough into equal portions and roll out into thin medium sheets. Cut each sheet into a square.
8. Divide the stuffing into equal portions and shape into 4 inch rolls.
9. Place each stuffing roll in the center of each square sheet.
10. Mix remaining flour in some water to make a thick slurry and apply some on the sides of each square sheet, roll and seal, applying some slurry.
11. Cut each roll diagonally into 4 equal pieces, place them on a baking tray and brush some ghee on top.
12. Put the tray into the preheated oven and bake for 15-20 minutes.
13. Spread some green chutney on opposite sides of a serving platter, place the kababs in the center and serve hot.
