GRANOLA PARFAIT
Ingredients
For one portion
½ cup oats
1 tablespoon chopped walnuts
1 tablespoon raisins
½ tablespoon melon seeds
½ tablespoon pumpkin seeds
5 tablespoons honey
¾ cup thick yogurt
3-4 strawberries
8-10 fresh mulberries
12-14 fresh blueberries
Fresh mint sprig for garnishing
Method
1. Drizzle 3 tablespoons honey in a microwave safe cup. Add 2 tablespoons water and mix well. Add oats, walnuts, raisins, melon seeds, pumpkin seeds and mix well.
2. Place in a microwave and heat for 1 minute. Remove from microwave and mix.
3. Heat again in the microwave for 30 seconds. Repeat the process once again.
4. Take yogurt in a bowl. Add remaining honey and whisk well and transfer into a piping bag fitted with a nozzle.
5. Hull and cut strawberries into thin wedges.
6. Pipe some yogurt mixture into a glass. Top with some oats mixture, half the strawberry wedges, half the mulberries and half the blueberries. Repeat the process once more.
7. Garnish with mint sprig and serve immediately.
