PALAK CUTLET
Ingredients
1 medium bunch of spinach (palak) blanched and drained
2 green chillies stemmed and broken
½ inch ginger
3 medium potatoes boiled peeled and mashed
½ tsp garam masala powder
Salt to taste
1 cup fresh breadcrumbs
Oil for greasing + for shallow frying
Tomato ketchup to serve
Method
1. Coarsely grind together blanched spinach green chillies and ginger in a mixer without using any water. Transfer this into a large bowl.
2. Add potatoes garam masala powder and salt and mix till well combined. Add fresh breadcrumbs and mix well.
3. Grease your hands with some oil and take a small portion of the mixture and shape it like a ball. Slightly flatten to shape it like a cutlet.
4. Heat sufficient oil in a non-stick shallow pan. Slide in the cutlets and shallow fry till golden brown and crisp. Drain on an absorbent paper.
5. Serve hot with tomato ketchup.
