BAKED PALAK PANEER
Ingredients
1 cup blanched spinach puree
½ cup cottage cheese cubes
2 tbsps oil
1 tsp cumin seeds
2 tsps finely chopped garlic
1 medium onion, finely chopped
Salt to taste
2-3 green chillies, finely chopped
100 gms mozzarella cheese
1 tsp garam masala powder + for sprinkling
2 tbsps fresh cream
Green capsicum thin strips for garnishing
Method
1. Preheat oven to 180º C.
2. Heat oil in a non-stick pan, add cumin seeds and garlic and sauté till the garlic turns golden. Add onion and sauté further till the onion becomes soft. Add spinach puree and mix well. Add salt and mix well. Add green chillies and mix well and cook for 2-3 minutes.
3. Cut mozzarella cheese into small cubes and put them in a bowl. Add garam masala powder and mix well. Add cottage cheese, salt and fresh cream and mix well.
4. Spread the spinach mixture in a baking dish, over that layer mozzarella cheese-cottage cheese mixture, sprinkle garam masala powder, keep the dish in the preheated oven and bake for 15 minutes.
5. Remove the dish from oven, garnish with capsicum strips and serve immediately.
