A Bengali spice mix that is widely used in Bengali preparations right from panchmishali torkari to street-foods such as puchka churmur and ghugni.
BHAJA MASALA
Ingredients
4 tbsps cumin seeds
2 tsps coriander seeds
2 bay leaves
4 tbsps fennel seeds (saunf)
6-8 green cardamoms
3 dried red chillies
Method
1. Dry roast cumin seeds coriander seeds and bay leaves in a pan till they turn fragrant. Transfer in a plate and allow to cool.
2. Add fennel seeds green cardamoms and dried red chillies in the same pan and roast till fragrant. Transfer in the same plate and allow to cool.
3. Put the roasted spices in a mixer jar and grind to a fine powder.
4. Transfer the masala into a jar. Use as required.
