Feta & Spinach Grilled Cheese | कैफे वाली ग्रिल सैंडविच रेसिपी | Sanjeev Kapoor Khazana
No onions and no tomatoes. A simple and easy-to-put-together sourdough bread sandwich for a quick bite before heading out.
FETA & SPINACH GRILLED CHEESE
Ingredients
100 grams feta cheese
20-25 baby spinach leaves
8 slices of sourdough bread
1 tbsp olive oil + for brushing
8-10 garlic cloves
2 tbsps butter
Salt to taste
Crushed black peppercorns to taste
1 tsp red chilli flakes
1 tsp chopped fresh parsley leaves
1 tsp chopped garlic
Grated mixed cheese as required
Wafers to serve
Method
1. Preheat the oven at 180ºC.
2. Arrange the sourdough bread slices on the baking tray and brush olive oil on each slice. Bake in the preheated oven for 8-10 minutes.
3. Heat olive oil in a non-stick pan. Add garlic cloves and sauté till golden brown. Transfer the garlic cloves in a mortar and coarsely pound with the help of a pestle.
4. Heat the oil remaining in the pan. Add chopped garlic and mix well. Cook for 1 minute.
5. Add baby spinach leaves salt and crushed black peppercorns and mix well. Sauté for 1-2 minutes. Take the pan off the heat.
6. Bring the toasted bread slices out of the oven. Spread the prepared butter over one side of each toasted bread slice.
7. Add a portion of the spinach mixture over half of the bread slices. Sprinkle a portion of feta cheese add a portion of mixed cheese and cover with the remaining bread slices with the buttered side facing down. Place the sandwiches back in the preheated oven and bake for 5-6 minutes or till cheese melts.
8. Cut the sandwiches in half and serve with wafers.
