MASALEDAR PANEER STEAKWITH YELLOW GRAVY
Ingredients
400 grams cottage cheese (paneer)
1 medium onion
1 tablespoon oil + for shallow-frying
1 teaspoon cumin seeds
½ medium green capsicum
½ medium red capsicum
½ medium yellow capsicum
1 tablespoon ginger-garlic paste
1 large tomato, chopped
1 teaspoon red chilli powder
1 teaspoon coriander powder
¼ teaspoon turmeric powder
½ teaspoon garam masala powder
½ cup chopped mixed greenzucchini and yellow squash
Salt to taste
¼ cup cornflour
1 teaspoon butter
Beetroot micro greens for garnishing
Yellow gravy
1 tablespoon oil
4-5 green cardamoms
1 black cardamom
1 inch cinnamon
2 medium onions, peeled, boiled and pureed
¼ teaspoon turmeric powder
Salt to taste
2 teaspoons ginger-garlic paste
2 tablespoons cashew nut- melon seed paste
1 teaspoon coriander powder
½ teaspoon garam masala powder
1-2 tablespoons fresh cream
Method
1. Peel and finely chop onion.
2. Heat 1 tablespoon oil in a non-stick pan. Add cumin seeds and sauté till fragrant. Add finely chopped onion and sauté till golden brown.
3. Finely chop green capsicum, red capsicum and yellow capsicum.
4. Add ginger-garlic paste to sautéed onion and sauté for 1 minute. Add tomato and sauté till soft and pulpy.
5. Add chilli powder, coriander powder, turmeric powder and garam masala powder and sauté on low heat for 30 seconds. Add 1-2 tablespoons water and sauté for 1 minute.
6. Add zucchini and squash, mix and cook for 1 minute. Add salt, mix and cook for 1 minute.
7. Add chopped capsicums, mix and cook for 1 minute.Switch off heat, transfer in a bowl and cool.
8. Cut cottage cheese into roundels using a medium size cookie cutter and further cut into 1 cm thick roundels.
9. To prepare yellow gravy, heat oil in another non-stick pan. Add green cardamoms, black cardamom, cinnamon and sauté on low heat till fragrant.
10. Add onion paste and sauté for 1 minute. Add turmeric powder and salt and sauté for 30 seconds.
11. Add ginger-garlic paste and sauté for 1 minute. Add cashew nut- melon seed paste and mix. Add 2-3 tablespoons water, mix and cook for 1-2 minutes.
12. Add coriander powder and garam masala powder, mix and cook for 1 minute. Add cream and mix well.
13. Put the mixed vegetable mixture on half of cottage cheese roundels and cover with remaining cottage cheese roundels to make steak.
14. Take cornflour on a plate and coat the cottage cheese steak with it.
15. Heat a non-stick tawa. Add some oil and butter. Place the prepared cottage cheese steak and shallow-fry from both sides till light golden brown.
16. Strain the yellow gravy in another bowl.
17. Put gravy on one side of a serving platter and place the cottage cheese steak on the other side.
18. Garnish with beetroot micro greensand serve hot.
