BIHARI MALPUA
Ingredients
1 cup refined flour (maida)
2 tbsps semolina
1½ tbsps + ¾ cup sugar
1 tsp coarsely crushed fennel seeds
¼ tsp green cardamom powder
¼ cup full fat milk
2 tbsps grated dried coconut
Ghee for shallow frying
Slivered almonds for garnish
Blanched and slivered pistachios for garnish
Method
1. Take refined flour in a bowl. Add semolina 1½ tbsps sugar fennel seeds green cardamom powder milk and mix well.
2. Add ¾ cup water and mix well. Add dried coconut and mix. Set aside for 30 minutes.
3. For syrup heat a nonstick pan add sugar ½ cup water and mix well. Cook till the syrup reaches 1 string consistency. Set aside.
4. Heat sufficient ghee in shallow wide pan. Pour small ladleful of batter at distance and shallow fry till golden brown and crisp.
5. Drain and soak in warm sugar syrup for 15-20 minutes.
6. Drain and transfer on serving plate sprinkle almonds pistachios and serve.
