FISH CHIILI BASIL
Ingredients
400 grams basa fish fillets, cut into cubes
2 fresh red chillies
4-5 fresh basil leaves
¼ cup + 1 tablespoon cornstarch
Salt to taste
Crushed black peppercorns to taste
1 tablespoon oil + for deep-frying
1 tablespoon chopped garlic
2 tablespoons light soy sauce
2 teaspoons red chilli flakes
Method
1. Combine fish, ¼ cup cornstarch, salt and crushed peppercorns in a bowl and mix well.
2. Heat sufficient oil in a pan. Deep-fry the fish pieces till golden. Drain on absorbent paper.
3. Heat 1 tablespoon oil a non-stick pan. Chop red chillies diagonally and add alongwith garlic, mix and sauté well.
4. Add some water and mix. Add soy sauce and chilli flakes, mix well.
5. Dissolve 1 tablespoon cornstarch in some water and add. Mix well till the sauce thickens.
6. Add fried fish and mix well. Add crushed peppercorns and torn basil leaves, toss to mix. Let it get heated through.
7. Serve hot.
Preparation Time: 8-10 minutes
Cooking Time: 15-20 minutes
