PISTA CAKE
Ingredients
1 cup ProV Regal California Jumbo Pistachios
¾ cup fine semolina
2 cups milk
1 cup softened butter
1¼ cups castor sugar
3 eggs
1 tsp vanilla essence
¾ cup refined flour (maida)
1 tsp baking powder
6-8 fresh cherries
Sugar glaze as required
Blanched and slivered ProV Regal California Jumbo Pistachios to sprinkle
Method
1. Preheat the oven at 180°C.
2. Shell ProV Regal California Jumbo Pistachios. Transfer in a grinder jar add semolina and grind to fine powder.
3. Transfer in a bowl add milk and mix well. Set aside for 10-15 minutes.
4. Take butter in a large bowl. Add ¾ cup castor sugar and whisk till the sugar dissolves completely.
5. Break in the eggs one at a time and whisk after each addition. Add vanilla essence and whisk well.
6. Sift the refined flour and baking powder directly into it. Add the pistachios mixture and whisk till a smooth batter is formed.
7. Transfer the batter in a lined loaf tin and spread it evenly. Tap it for a few times. Place it in the preheated oven and bake for 40-45 minutes. Allow to cool and demould.
8. For topping heat a pan. Add remaining castor sugar ½ cup water fresh cherries and cook for 6-8 minutes.
9. Drizzle the sugar glaze evenly on the cake place the cherries sprinkle ProV Regal California Jumbo Pistachios and serve.
