A traditional dish during Baisakhi made with rice cooked in saffron and sugar along with rich dry fruits.

KESARI BHAAT
Ingredients
A few threads of saffron soaked + for garnishing
1 cup Basmati rice soaked and drained
1 tablespoon ghee
1 tablespoon raisins+ for sprinkling
7-8 cashew nuts roughly chopped + for sprinkling
½ cup sugar
½ teaspoon green cardamom powder
Method
1. Heat ghee in a non-stick pan. Add raisins cashew nuts and sauté. Transfer to a plate and set aside.
2. Add rice to the same pan and cook for 1-2 minutes. Add saffron and mix well. Add ½ cup water mix cover and cook till the rice is partially cooked.
3. Add sugar cardamom powder mix cover and continue to cook till all the water has been absorbed and the rice is soft.
4. Transfer to a serving plate. Sprinkle raisins and cashew nuts.
5. Serve hot garnished with saffron.
