CAULIFLOWER AND CASHEW SOUP
Ingredients
300 grams cauliflower cut into medium sized florets
½ cup Pro V Select Whole Natural Cashew
2 white bread slices
3 tbsps olive oil
8-10 black peppercorns
8-10 garlic cloves
Salt to taste
White pepper powder to taste
¼ tsp Madras curry powder
1½ tsps stock cube powder
2-3 fresh thyme sprigs
1 tbsp parmesan cheese powder
2-3 tbsps fresh cream + to drizzle
Toasted Pro V Select Whole Natural Cashew for garnish
Crushed black peppercorns to sprinkle
Fresh thyme sprigs for garnish
Method
1. Trim the edges of bread slices and cut into ½ cm squares.
2. Heat 1½ tbsps olive oil in a nonstick pan. Add black peppercorns garlic cloves and sauté for 30 seconds.
3. Add cauliflower Pro V Select Whole Natural Cashew and mix well.
4. Add salt white pepper powder Madras curry powder and mix well.
5. Add 3 cups water stock cube powder and mix well. Cover and cook on medium heat for 10-15 minutes.
6. Add thyme leaves and mix well.
7. Allow to cool transfer in a grinder jar and grind to fine mixture.
8. Heat remaining olive oil in a shallow nonstick pan. Add bread and cook till crisp.
9. Add parmesan cheese powder and toss well.
10. Heat a nonstick pan. Add ground mixture 1½ cups water and mix well.
11. Add fresh cream adjust seasoning and mix well. Allow to boil.
12. Transfer in serving bowls drizzle fresh cream place toasted Pro V Select Whole Natural Cashew and prepared croutons on top.
13. Sprinkle crushed black peppercorns garnish with thyme sprigs and serve hot.
