Rawa Idli | Simple Vegetarian Khana With Chef Saurabh | Sanjeev Kapoor Khazana HD
RAWA IDLI
Ingredients
1 cup semolina (rawa)
3 tablespoons ghee + for greasing
6-8 cashewnuts, broken
½ teaspoon mustard seeds
½ teaspoon cumin seeds (jeera)
6-8 curry leaves
1 tablespoon chopped fresh coriander leaves
Crushed black peppercorns to taste
1-2 green chillies, finely chopped
Salt to taste
½ cup sour yogurt
1 teaspoon fruit salt
Green coconut chutney for serving
Method
1. Heat 1½ tablespoon ghee in a non-stick pan. Add semolina and roast till golden brown. Transfer in a bowl and cool.
2. Heat 1½ tablespoons ghee in the same pan. Add cashewnuts and roast till golden brown. Drain in the same bowl and cool.
3. Add mustard seeds to same pan and let it splutter. Add cumin seeds and curry leaves and let the curry leaves splutter.
4. Add the tempering to the semolina mixture alongwith coriander leaves, crushed peppercorns, green chillies, salt and yogurt and mix well.
5. Add 1 cup water and mix well. Set aside for 10-15 minutes.
6. Heat some water in an idli steamer, cover and let it boil.
7. Add fruit salt to the semolina mixture and mix well.
8. Grease idli moulds with some ghee and put the semolina mixture in it filling ¾ of it and tap.
9. Place the idli mould in the hot steamer, cover and steam for 10 minutes or till done. Remove from steamer and demould.
10. Serve hot with green coconut chutney.
