BISCUIT CORN SEV PURI
Ingredients
12 cream cracker biscuits
½ cup corn kernels, boiled
2 large potatoes, boiled and cut into ½ inch pieces
½ teaspoon red chilli powder
Salt to taste
1 medium onion, finely chopped
Chaat masala for sprinkling
8 teaspoons green chutney
12 teaspoons sweet date tamarind chutney
3 teaspoons red garlic chutney
Fine sev as required
Finely chopped fresh coriander leaves as required
1 small raw mango, peeled and finely chopped
Method
1. Mix together potatoes, corn kernels, chilli powder and salt in a bowl and mash the potato pieces.
2. Arrange biscuits on the worktop.
3. Divide the potato mixture into equal portions.
4. To prepare one puri, put one portion of potato mixture, some onion and sprinkle some chaat masala on top. Put ½ teaspoon green chutney, 1 teaspoon sweet date tamarind chutney and ¼ teaspoon red garlic chutney on top.
5. Put some sev, coriander leaves and some raw mango and serve immediately.
