MULTIGRAIN PARANTHA
Ingredients
1 cup whole wheat flour (atta) + for dusting
¼ cup finger millet flour (ragi)
¼ cup soya flour
1 large raw banana, boiled, peeled and mashed
2 tablespoons boiled green peas
2-3 tablespoons chopped green capsicum
2 tablespoons grated cabbage
2 tablespoons grated purple cabbage
1 teaspoon crushed green chillies
1 tablespoon chopped fresh coriander leaves
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
½ teaspoon garam masala powder
½ teaspoon dried mango powder (amchur)
1 teaspoon sugar
Salt to taste
1½ tablespoons oil + for basting
¼ cup grated processed cheese
Raita for serving
Method
1. Take 1 cup wheat flour in a bowl. Add soya flour, millet flour, raw banana, green peas, capsicum, cabbage, purple cabbage, green chillies, coriander leaves, turmeric powder, chilli powder, garam masala powder, dried mango powder, sugar, salt and 1 tablespoon oil and mix well.
2. Add sufficient water and knead into a stiff dough. Add ½ tablespoon oil and knead again.
3. Divide the dough into large equal portions and roll out into semi-thick discs, dusting with some wheat flour.
4. Spread some cheese on half of discs, cover them with another disc, press and lightly roll out again.
5. Cut each prepared discs into stars using a medium size star cookie cutter.
6. Heat a non-stick tawa. Place the prepared stars and roast till golden brown and crisp, basting with some oil. Transfer on an absorbent paper.
7. Serve hot with raita.
