HEALTHY BEAN SOUP
Ingredients
½ cup black eyed beans (lobia), soaked overnight and drained
1 tablespoon olive oil
1 tablespoon chopped garlic
2 teaspoons finely chopped celery
1 medium onion, finely chopped
1 small carrot, finely chopped
Salt to taste
Crushed black peppercorns to taste
1 teaspoon dried oregano
6-8 spinach leaves
Bread sticks for serving
Method
1. Pressure cook black eyed beans with salt in 2 cups water till 1-2 whistles are released. Open the lid when the excess air is released. Drain the beans and reserve the stock.
2. Heat olive oil in a non-stick pan. Add garlic, celery and onion and sauté for 1 minute.
3. Add carrot and sauté for 30 seconds. Add black eyed beans, mix and cook for 1-2 minutes. Add salt, crushed peppercorns and oregano and mix well.
4. Add black eyed bean stock, mix and cook till the mixture boils. Add spinach leaves, mix and cook for 2-3 minutes.
5. Serve hot with bread sticks.
