SCONES Ingredients 2 cups refined flour + for dusting 1 teaspoon salt 3 tablespoons castor sugar 1 tablespoon baking powder 100 grams butter 1 teaspoon vanilla essence ½ cup milk 1 egg Mixed fruit jam as required Cream cheese as required Method 1. Preheat oven at 180ºC. 2. Take flour in a bowl. Add salt, castor sugar and baking powder and mix well. Set aside. 3. Roughly chop butter. 4. Add flour mixture and chopped butter in an electric food processor and whisk well to get a crumbly texture. Transfer into the same bowl. Add vanilla essence and milk and knead into a soft dough. 5. Dust the worktop with some flour, place the dough and roll out to make a thick sheet. Cut the dough using a medium size serrated cookie cutter and put them onto a baking tray. 6. Break an egg in a bowl and whisk well. Brush some egg on top of scones. Place the baking tray in preheated oven and bake for 10-15 minutes. Remove from oven and cool. 7. Horizontally slice the scones. Put some mixed fruit jam and cream cheese on each halved scone and cover with the other half. 8. Serve.
