SPICY CHICKEN TARTINES
Ingredients
2 boneless chicken breasts
4-6 bread slices
Salt to taste
Crushed black peppercorns to taste
2teaspoons chopped garlic
1 teaspoon dried oregano
2-3 fresh rosemary sprigs, roughly chopped
1 tablespoon olive oil
1 teaspoon red chilli flakes
ΒΌ cup tomato ketchup
Basil leaves for topping
Parmesan cheese powder for topping
Method
1. Cut chicken into strips. Add salt, crushed peppercorns, 1 teaspoon garlic, oregano and fresh rosemary to chicken and mix well.
2. Heat 1 tablespoon olive oil in a non-stick pan. Add marinated chicken, mix and cook till done.
3. Heat remaining oil in a non-stick pan. Add remaining garlic, chilli flakes, remaining dried oregano and mix well. Add tomato ketchup, switch off heat and toss to mix.
4. Heat a non-stick pan. Place each bread slice and toast equally from both sides for few seconds. Remove from heat and transfer onto a worktop.
5. Put some prepared chicken over each toasted bread slice and drizzle some tomato sauce. Top with some torn basil leaves and parmesan cheese.
6. Put the prepared tartines onto a baking tray, place the baking tray in preheated oven and bake till golden.
7. Serve hot.
Preparation Time: 8-10 minutes
Cooking Time: 10-12 minutes
