CHUNKY CHICKEN PASTA SOUP
Ingredients
1 boneless chicken breast, cut into ½ inch cubes
½ cup macaroni
1 tablespoon olive oil
1 tablespoon chopped garlic
1 medium onion, chopped
1 small carrot, peeled and cut into small cubes
1 inch celery, finely chopped
¼ medium broccoli, separated into small florets
3 cups chicken stock
¼ cup fresh cream
2 teaspoons finely chopped fresh parsley
Salt to taste
Crushed black peppercorns to taste
10 grams Parmesan cheese + for garnishing
Herbed garlic bread slices for serving
Method
1. Heat olive oil in a deep non-stick pan. Add garlic and onion and sauté for 1 minute. Add carrot, celery and broccoli and sauté for 1-2 minutes.
2. Add chicken cubes, mix and cook for 1-2 minutes. Add macaroni and chicken stock, mix, cover and cook till the macaroni is done.
3. Add cream, parsley, salt, crushed peppercorns and grate 10 grams parmesan cheese, mix and bring the mixture to boil.
4. Pour soup in individual serving bowls, grate some parmesan cheese and sprinkle some crushed peppercorns on top.
5. Serve hot with herbed garlic bread slices.
