Boondi raita ki lazzat badhaye ye onion tomato pulao .. Spicy and a great option when rice needs a twist. ONION TOMATO PULAO Ingredients 3 medium onions chopped 3 medium tomatoes chopped 1½ cups Basmati rice soaked for 30 minutes and drained 3 tbsps ghee 1 tsp cumin seeds 2 bay leaves 6-8 black peppercorns Salt to taste 4-5 green chillies slit ¼ tsp red chilli powder 4-5 tbsps chopped fresh coriander leaves Fresh coriander sprig for garnish Boondi raita for serving Method 1. Heat ghee in a deep nonstick pan. Add cumin seeds bay leaves peppercorns and sauté till fragrant. 2. Add onions and sauté till translucent. 3. Add tomatoes salt green chillies and mix well. Cook on medium heat till the tomatoes turn soft and pulpy. 4. Add red chilli powder 2-3 tbsps coriander leaves and mix well. 5. Add rice and mix. Add 2 ½ cups hot water. Adjust salt. 6. Once the mixture comes to a boil cover and cook on medium heat for 10-12 minutes. 7. Add remaining coriander leaves and mix well. 8. Transfer into a serving plate garnish with coriander sprig and serve hot with boondi raita.
