MADRAS CURRY POWDER
Ingredients
1 cup coriander seeds
1 tbsp black peppercorns
1 tsp fenugreek seeds
1 tbsp cumin seeds
1 tbsp fennel seeds
10-12 cloves
1 tsp mustard seeds
1 inch cinnamon stick
10-12 green cardamoms
10-12 dried red chillies stemmed
20-25 curry leaves
2 bay leaves
½ tsp asafoetida (hing)
6-8 garlic cloves sliced and fried
¼ cup fried onions
1½ tsps turmeric powder
Salt to taste
Method
1. Heat a pan. Add coriander seeds black peppercorns fenugreek seeds cumin seeds fennel seeds cloves mustard seeds cinnamon green cardamoms dried red chillies and dry roast for 2-3 minutes.
2. Add curry leaves bay leaves and dry roast for a minute.
3. Add asafoetida and mix well. Transfer in a bowl and allow to cool.
4. Add garlic fried onions and mix well.
5. Transfer into a blender jar add turmeric powder salt and grind to fine powder.
6. Store in air tight container and use as required.
