Ingredients
3 large potatoes peeled and cut into ½ inch pieces
2 tbsps mustard oil
1½ tsps panch phoran
2 dried red chillies
½ tsp turmeric powder
½ tsp red chilli powder
½ tsp cumin powder
Salt to taste
½ tsp sugar
Method
1. Heat mustard oil in a non-stick pan add panch phoran and let the seeds splutter. Break the dried red chillies and add them to the pan. Add the potatoes and sauté well.
2. Add turmeric powder sauté and cook for 3-4 minutes. Add red chilli powder cumin powder and sauté well. Cook for 2-3 minutes.
3. Add salt sugar and 2 cups of water mix well. Cover and cook till the potatoes are completely cooked.
4. Serve hot.
1:37 Kaddu Aur Aloo ki Sabzi
Ingredients
250 grams red pumpkin (kaddu) peeled deseeded and cut into 1 cm pieces
250 grams potatoes peeled and cut into 1 cm cubes
2 tbsps oil
1 tsp cumin seeds
¾ tsp red chilli powder
½ tsp dried mango powder (amchur)
½ tsp turmeric powder
½ tsp garam masala powder
Salt to taste
3 tbsps freshly chopped coriander leaves
Onion rings to serve
Green chillies to serve
Lemon wedges to serve
Coriander sprig for garnish
Method
1. Heat oil in a non-stick pan add cumin seeds and let them change colour. Add the pumpkin and sauté for 1 minute.
2. Add the potatoes and sauté well. Add red chilli powder amchur turmeric powder garam masala powder salt to taste and sauté for 1 minute.
3. Add chopped coriander and add 2 cups water mix well. Cover and cook till the potatoes are cooked.
4. Garnish with coriander sprig and serve hot with onion rings green chillies and lemon wedges.
