KORAISHUTIR KOCHURI WITH CHOLAR DAL
Ingredient
Stuffing
1 cup frozen green peas
2 tsps oil
½ tsp onion seeds
2 green chillies, chopped
1 tbsp ginger garlic paste
½ tsp cumin powder
1 tsp coriander powder
Salt to taste
¼ tsp sugar
Dough
1 cup refined flour
A pinch of sugar
Salt to taste
2 tsps oil
Cholar Dal
1 tsp ghee
1½ cups Bengal gram (chana dal), soaked overnight
½ tsp cumin seeds
3-4 cloves
1 dried red chilli, broken
1 bay leaf
½ inch cinnamon stick
2-3 green chillies, slit
1 tbsp chopped fresh coconut slices
¼ tsp turmeric powder
6-7 raisins
Salt to taste
A pinch of sugar
Coriander sprigs for garnish
Method
1. Add frozen green peas to a grinder jar and grind into fine paste and set aside.
2. For making stuffing heat oil in non-stick pan add onion seeds, green chillies, ginger garlic paste sauté for 2-3 minutes.
3. Add ground green peas and cook for 5-6 minutes on medium heat.
4. Add cumin powder, coriander powder, salt, sugar and cook for 3-4 minutes and set aside for cooling
5. Pre-heat air-fryer at 180°c.
6. For making dough mix together refined flour, sugar, salt, oil and knead into semi-hard dough with sufficient water. Cover with muslin cloth and set aside for 10 minutes.
7. For dal, heat ghee in a non-stick pan, add cumin seeds, cloves, dried red chillies, bay leaf, cinnamon stick, green chilli, coconut and sauté till the coconut turns golden brown.
8. Add Bengal gram, turmeric powder, raisins, salt, sugar mix well add 2 cups water, cover and cook on low heat for 10-15 minutes
9. Divide the dough into equal portions, apply oil on a palm and stuff with some cooked green peas mixture. Roll into thick small discs.
10. Brush oil on air-fryer tray and place kochuri on it and bake for 8-10 minutes.
11. Garnish the cholar dal with coariander sprig and serve hot with kochuri.
