MANGO SHEERA
Ingredients
1 medium ripe mango, peeled and chopped
1 cup semolina (suji/rawa)
2-3 tablespoons ghee + for drizzling
Salt to taste
1 cup milk
Large pinch saffron + for garnishing
1 cup sugar
½ teaspoon green cardamom powder
10-12 pistachios, blanched
Blanched pistachio slivers for garnishing
Method
1. Dry roast semolina for 2-3 minutes.
2. Heat ghee in a non-stick pan. Add roasted semolina and mix. Add mango, salt, mix and cook for a minute.
3. Add milk and sit to mix. Add saffron, cover and cook till the moisture dries.
4. Add sugar, cardamom powder and pistachios, mix well, cover and cook till the mixture reaches a halwa consistency.
5. Drizzle some ghee, mix well, cover and let it get heated through.
6. Garnish with some saffron and pistachio slivers and serve.
